Argentinean cake with dulce de leche and berries

I know, I know, I’ve promised 2 recipes since last week. Something occurred, though. Two days ago, I was searching for a solution dealing with some soured whipping cream... and I ended up clicking the recipes on my blog.

So, I told myself ’Why not make a list of recipes to bake/cook when we’ve got ingredients about to spoil?’

I’d like to keep it updated, by categories!

 

Basic ingredients

cottage cheese: papanaşi, baked papanaşi, Dobrujan pie

egg whites: Pavlova, pricomigdale, walnut cookies

milk: supangle, muhallabieh, galatopita, trileqe, condensed milk

sour cream: ashta

whipping cream: savarine, molehill cake

yoghurt: Romanian donuts, lemon pound cake

1 yolk: tart crust

several yolks: crema catalana

 

Fruits

apples: apple pie, apple strudel

bananas: Banoffee Pie, vegan coconut and strawberry dessert, vegan banana cookies, vegan banana and peanut butter cookies, vegan banana pound cake, banana and oatmeal cake, banana muffins

blackberries: syrup

grapes: grape pizza, grape cake

quinces: upside-down quince cake

raspberries: smoothie

rhubarb: rhubarb and strawberry cake, rhubarb sauce

 

Vegetables and herbs

basil: pesto

eggplant: mirza ghasemi

spinach: spanakopita

 

Already-processed foods

condensed milk: colchão de noiva, Deliciu

preserves: negresă (Romanian brownie)

Cocoa alfajores with dulce de leche

26 cookie halves -> 13 alfajores

 

120g butter (room temperature)  

80g sugar

2 egg yolks

vanilla extract

190g flour

8g baking powder

a pinch of salt

30g cocoa

 

+100g dulce de leche (or caramel if don’t have dulce de leche)

+45g dark chocolate


Munching alfajores was one of the loveliest dessert-related events in Argentina. I did have them in Uruguay and Chile, but Argentine alfajores had something special, with the special Argentine dulce de leche... As I miss my friends and Argentina very much, I asked my dear friend Nuria to give me the recipe. You can find Nuria and her bakes here and here – she is a very talented pastry chef!


And then, as Nuria and I are so much alike, even the recipe is listed in a simple manner that I try to use, too (I translated it and adapted it from Spanish).

Mix the butter and the sugar; add the yolks and some vanilla extract drops; continue to stir.

In a separate bowl, measure the flour, add the baking powder, the salt, and the cocoa. Mix the dry ingredients into the previous wet ones. You may even knead a bit, not too much, though, and proceed with one of the following two techniques.

Make the alfajores dough

Either roll out the dough and cut round cookies by using a 6cm cutter or shape balls that you crush and cut out round cookies (Nuria uses the latter technique – I tried them both out).

Bake in the preheated oven, at 180°C, for 6-7 minutes, on a baking tray lined with baking parchment, and then leave the cookies cool.

Bake the alfajores cookie halves

Remember, as they cool, the cookies will harden, so don’t worry if they seem too soft when you take them out of the oven. In terms of texture, alfajores are not very crunchy, anyway.

Spread dulce de leche on two halves and sandwich them together; do so for all the halves; these sandwich cookies are actually alfajores.

As a version, I wanted to chocolate-glaze them and I tested my technique on two alfajores (the amount of chocolate listed will suffice only for two – I used chocolate with 54.5% cocoa solids). I melted 30g chocolate on a steam bath; I then removed it from the heat and added the remaining 15g of chocolate, continuously mixing, until this, too, melted. This way, I tempered it, keeping it glossy and crunchy.

 

I tasted the butter, the notes of the dulce de leche and I returned to Argentina while I savoured them. Son geniales, mi Nu!

Banoffee Pie

DOUGH
150g flour
70g butter (melted and cooled)
1 egg yolk
10g vanilla sugar
1 tbsp of vinegar
2 tbsp of water
a pinch of salt

CARAMEL SAUCE
200g sugar
a pinch of salt
60ml water
80g sour cream, 25% fat content
4 tbsp of butter

+butter and flour -> baking pan
+2 medium bananas
+220g sour cream, 25% fat content, mixed with 15g sugar

Banoffee Pie is an English dessert, but I discovered it in India. I can still remember seeing a scrumptious dish taken to the table of a Russian travel couple, on our accommodation’s terrace in Goa. ’What did those people order?’ I asked our waiter... and then... that plate smelling of fresh bananas got onto our table, too.

I’ve kept trying out versions of the delicious Banoffee Pie and I think that I’ve finally found one that I like.  
I used this tart crust recipe. Bake it blind (I don’t have baking beans – I keep trying to buy them –; if you have them, use them).
Cut the bananas into slices and fill the crust with them.
Pour the caramel sauce over; leave everything cool and decorate with the sour cream mixed with the sugar.

Such a slice is a treat! Serve chilled.

Tart crust

150g flour
70g butter (melted and cooled)
1 egg yolk
10g vanilla sugar
1 tbsp of vinegar
2 tbsp of water
a pinch of salt

+butter and flour -> your baking pan

I tested many tart crusts – for some, I needed to wait one hour while they were sitting in the fridge; for others... 3 hours.
I am very demanding with my time, so this old family recipe was perfect for me!
I think it will save you a lot of time.

In a bowl, mix the flour, vanilla sugar, and salt. Separately, mix the wet ingredients – the butter, the egg yolk, the vinegar, and the water. Pour the wet ingredients onto the dry ones.
When you reach a nice consistency, start to knead until you get a soft and wet ball of dough. 
Using a silicone mould (which doesn’t need greasing) or one of another type (either round or square) – which must be greased though –, spread the dough onto its bottom and its sides. 

Et voilà !

Vanilla gelato

Makes 350g of gelato

2 egg yolks
5g vanilla sugar
100g powdered sugar
300ml milk
lemon zest
orange zest

This was the homemade gelato of my childhood. 

Mix the egg yolks, the powdered sugar, the vanilla sugar, a bit of lemon zest, and a bit of orange zest. Pour in the milk.

Place the bowl (I used a metallic bowl) onto a water bath and mix until the batter thickens.
Let the mix cool
 
Let it cool, pour it into the gelato machine, or leave it in the freezer for at least 1 hour.

From today on, my love is also addicted to the taste of this gelato. It is sooooo creamy!

Crema catalana

4 portions

500ml milk
1 cinnamon stick or 1 Tonka bean
4 egg yolks
80g sugar
25g cornstarch
80ml water
vanilla extract

+ sugar or pieces of fruit for decorating

I made Pavlova and I was left with egg yolks, so I told myself I’d prepare some crema catalana. I discovered it in Alghero, where Catalan heritage was preserved over time.

It’s very easy to make:
Boil 500ml of milk with a cinnamon stick (I used a Tonka bean).
Separately, mix 4 yolks with 80g of sugar until the colour you get is pale yellow.
Add 25g of cornstarch (dissolved into 80ml of water) and a drop of vanilla extract.
Take a spoonful of the warm milk (remember to take out the cinnamon stick or the Tonka bean) and mix it into the yolk/sugar/cornstarch blend, then pour everything into the milk.
Do it carefully and keep mixing until it thickens.
Transfer into ramekins, let the crema catalana cool, and then leave it in the fridge overnight.

I have this apple pie recipe not from my grandmothers or from my mother, but my godmother. I found it on an old piece of paper, with my mother’s handwriting on it, in Hungarian.

Apple pie

DOUGH
150g flour
70g butter (melted and cooled)
1 egg yolk
10g vanilla sugar
1 tbsp vinegar
2 tbsps water
a bit of salt

FILLING
4 large apples (chopped or grated)
15g butter
a bit of cinnamon (ground)
a bit of sugar

First, let’s make the dough.
Let’s continue with the filling. We will cut the apples into cubes and chop them (I used my blender) or grate them (as I’ve seen my grandmothers do many times).

Heat the butter in a saucepan, add the apples and a touch of cinnamon and sugar and mix for 2-3 minutes. The flavours will drive you wild!
As a last step, spread the apples over the dough, put the pie into the oven and bake at 170ºC for 15 minutes.
