200g cottage cheese
1 big egg
1 sachet vanilla
sugar
65g sugar
zest, ½ lemon
lemon juice
¼ teaspoon baking
powder
140g flour
+oil for frying
+flour for dusting
+sour cream
One
of my childhood’s favourite desserts was this. I would anxiously wait for my
Mom to prepare the papanaşi (she used
to fry them in the pan – I will probably try it in a few weeks) and then soak them
in sour cream and preserves! Mmmm... A few years ago, when one of my best friends
asked me to prepare them, I called my Mom and she gave me the recipe.
The
dough is very easy to make: mix the cottage cheese with the egg; add the sugar
and the vanilla sugar, the lemon zest and the baking powder (pour a little bit
of lemon juice over it before mixing it in). Add the flour, little by little.
Start kneading and, if necessary, add some more flour until your dough is no longer
sticky.
Cut
pieces of the dough, shape them into round (flat) pieces and fry them on both
sides in hot oil, on a low fire.
Tip: roll the
papanaşi through flour before frying them.
Serve
them warm, as I’ve previously said, with sour cream and preserves – I used blueberry preserves (made by my Dad).
The
result?
Marcel
