Fluffy banana and yoghurt pancakes

Makes 4 pancakes (Φ 14 cm)

 

1 banana

1 egg

120g yoghurt

65g flour

4g baking powder

5g vanilla sugar

 

+ butter à pan

+ hazelnut spread à serving  

 

At times, we are craving a filling and fast breakfast. These pancakes can be a successful candidate to this end.

 

How to make them?

Mash the banana, add the entire egg, the yoghurt (I used buffalo yoghurt), the flour, the baking powder, and the vanilla sugar. Mix well.

Butter the pan and let it heat up. Spread a big ladle of batter onto the entire surface of the pan (thickness: 2-3 mm); flip the pancake only when you see bubbles form. (Be careful – banana pancakes have a different texture than regular pancakes; it is more difficult to work with them and are stickier.)

 

Serve them warm with a hazelnut spread. Not even our cats were indifferent.

Pumpkin seed butter waffles

I wanted to make them for so long. In the end, I did.

What to use for 7 waffles?

130g flour

3g baking powder

200ml milk

3g salt

30g (melted and cooled) butter

2 tbsp of pumpkin seed butter

 

How to make them?

Have your waffle-making device ready.

Mix all the ingredients. Transfer the batter to the waffle-making device by using a ladle. Be careful! The batter will be very elastic. You can place a ball of batter in the middle of the waffle mould – it will spread when heated.

These waffles are very filling. They can even be used as ’bread slices’ or eaten with vegetables and cheese.

Eggless waffles

 

I didn’t manage to wish ’Happy New Year!’ to you yesterday, but I am doing it now! Have sweetness in your life during the entire year! ♥

 

We all have many desserts in our homes during this time of the year. When they finish, if you have a waffle-making device – I received one from my Dad on my birthday – and you’re searching for a light dessert, here’s a great recipe. You won’t need too many ingredients—

(for 7 waffles)

130g flour

3g baking powder

200ml milk

5g vanilla sugar

2 tbsp of sugar

30g (melted and cooled) butter

 

+ 150g whipping cream

15g sugar

blueberries (or any other fruits preferred by you)

 

Mix all the ingredients.

Transfer parts of the batter to the waffle-making device by using a ladle.

Eggless waffle batter

Mix the whipping cream and the sugar.

 

Serve the waffles with whipped cream and blueberries – you will be happy like a child!

Banana milkshakes

Finally, here’s my favourite milkshake. It’s so easy to make!

 

In a blender, mix

250ml milk

2 bananas

4g vanilla sugar

 

for 1 minute. Then, pour into glasses, add a large ice cube, and cool down!

It is enough for 2 people.

Baked papanasi

Makes 16

 

500g cottage cheese

a few drops of vanilla extract

zest from one organic orange

2 eggs

2 tbsp of coconut sugar

1/2 sachet of baking powder

330g flour

 

+sour cream, blueberry preserves

 

Fried, boiled, and even baked, papanaşi are always tasty!

However, there are times when – even with all the ingredients at hand –, I’m not in the mood to fry them. This recipe is precisely for those times!

 

They are easy to put together. Mix the cottage cheese, the vanilla extract, the orange zest, and the eggs. Add the coconut sugar, the baking powder, and the flour. Knead until the dough is firm and not sticky. Optional: keep it in the fridge for 45 minutes to turn it even firmer.

The papanasi dough

Then, divide it into 4. Each piece of dough will make 4 papanaşi. You’ll work with dough balls. Flatten each and make a hole in their centre.

This is how baked papanasi are made!

Shape them well before getting them into the oven. They’ll bake for 20 minutes at 180⁰C, in a baking pan lined with baking parchment.

They turned golden and I served them with lots of local sour cream and blueberry preserves.

Fried bananas

When your week is really hard (and you’re like me), you will crave some comfort food.

I made fried bananas, for 2, as follows:

 

50g flour

2 teaspoons of sugar

a pinch of salt

1 teaspoon of cinnamon

2 tbsp of cornstarch

zest from half a lemon

60ml milk

2 medium-large bananas

6 tbsp honey

 

+oil for frying

 

Mix the flour, the sugar, the salt, the cinnamon, the cornstarch, and the lemon zest. Add the milk.

Batter for fried bananas

Cut the bananas into larger pieces and roll them through the batter.

Fry them until brown when the oil is hot.

We ate them with honey... yum!
