Homemade chocolate reinterpreted
 
We can fail, overcook or undercook dishes – it happens.
At times, the syrup is not thick enough. There’s too little powdered milk at other times. The dough doesn’t harden and that’s that!
What to do?

I melted the dough (bain-marie) and then mixed in (without stopping) 1 egg and 65g flour (please check if the recipe used by you is more or less this one, shared by me). Then, I placed the baking pan (20x20cm) into the oven, preheated at 165°C, for 25 minutes. I got a wonderful fudge cake.

You managed to save the ingredients and bake a great cake (I savoured it with a raspberry and blackberry smoothie)!

The first slice of the grape pizza
 
250g grapes
2 tbsp semolina
80g brown sugar
nutmeg
cinnamon
juice from half an orange
15g butter
flour

I was inspired by an original plum pizza recipe.
Then, I adapted the ingredient amounts and I realised that this grape pizza is wonderful, too. Marcel keeps asking me to bake it. J

Butter and flour a tart baking pan.
Roll out the pizza dough – learn how to make it here –, then sprinkle 2 tablespoons of semolina over it.
Wash the grapes, roll them through a little bit of flour and then arrange them on the dough.
Separately, mix brown sugar with a little bit of cinnamon and nutmeg and pour over the grapes – this will caramelise them nicely.

For some flavour and less sweetness, squeeze half an orange and pour the juice over the pizza.
As the final touch, spread small pieces of the 15g of butter on the pizza.
Bake in the preheated oven, at 200°C, for 8 minutes.

My favourite slice of this dessert is always served warm, straight out of the oven. How's yours?

Grape cake

2 eggs
100g sugar
vanilla extract
lemon zest
5g baking powder
75g butter (melted and cooled)
75g yoghurt
200ml milk
75g flour
250g grapes

It is wise to eat frugally during these times, in my opinion. I had some grapes from my Dad (he always buys me grapes!), so I told myself to try out a new recipe from my Mom.

Beat the egg whites until stiff; add sugar little by little, followed by the egg yolks. Mix in a dash of vanilla extract and a little bit of lemon zest, together with the baking powder, the butter, the yoghurt, the milk (I used pistachio milk), and the flour.

Pour the batter into a rectangular baking pan, on baking parchment.
Wash the grapes and roll them through some flour; then, scatter them over the dough.

Bake for 20 minutes in the preheated oven, at 180°C.

Note
Mom writes at the end of her recipe that you may use any fruits – ’juicy’ ones, I’d add: sour cherries, apricots, cherries, blackberries…

This cake is so fluffy and ‘so easy to eat’, like my Marcel would say!

Homemade chocolate and orangeade on a warm spring day

250g sugar
160g powdered milk
33g cocoa
170ml water
65g butter
vanilla extract


First of all, it’s a type of fudge that every child and adult in Romania loves. This recipe reminds me of my childhood, as it is my mother’s recipe. I remember how anxious I was while waiting for my Mom to pour the chocolate into a tray and then cut it... to be able to taste it, of course!
I will leave my mother’s words to guide you.

Mix the sugar and the cocoa, then add the water and heat in a pot for 7 minutes. Cool. 
Stir until the mix is smooth and slightly warm.
Separately mix 80g powdered milk with the butter (melted, at room temperature) and then add this new mix to the warm one. Mix in the remaining 80g of powdered milk and a drop of vanilla extract.

Pour into a tray (20x20cm, lined with a baking parchment), level the chocolate mass, and cut after it cools.

I looked through many recipes today and I realised that I don’t have much butter left (my favourite ingredient), but that I do have apples and they would soon spoil if I don’t use them.
As I don’t like throwing food away, simply because many people lack food, I told myself ‘Let me try a soufflé’. A healthy one – my Mom’s recipe.
Apple soufflé

250g apples
500ml water
100g sugar
1 egg white
1 sachet of vanilla sugar


Let’s clean the apples and cut them into slices.

Heat 500ml of water with 100g of sugar. Add the apples after the sugar dissolves. Boil well, for 5-7 minutes.
Add the apples; boil well

Prepare some ramekins or heat-resistant cups and place the apple slices into them, without the juice.

After beating an egg white with a sachet of vanilla sugar, spoon the foam over the apple slices.

Fill 1/5 of two smaller trays or heat-resistant dishes with water, place the ramekins or cups into them, and let them sit in the preheated oven at 170ºC for 7 minutes.  

The soufflé is best served warm – it gives off a wonderful feeling, especially on cold winter afternoons.

I have this apple pie recipe not from my grandmothers or from my mother, but my godmother. I found it on an old piece of paper, with my mother’s handwriting on it, in Hungarian.

Apple pie

DOUGH
150g flour
70g butter (melted and cooled)
1 egg yolk
10g vanilla sugar
1 tbsp vinegar
2 tbsps water
a bit of salt

FILLING
4 large apples (chopped or grated)
15g butter
a bit of cinnamon (ground)
a bit of sugar

First, let’s make the dough.
Let’s continue with the filling. We will cut the apples into cubes and chop them (I used my blender) or grate them (as I’ve seen my grandmothers do many times).

Heat the butter in a saucepan, add the apples and a touch of cinnamon and sugar and mix for 2-3 minutes. The flavours will drive you wild!
As a last step, spread the apples over the dough, put the pie into the oven and bake at 170ºC for 15 minutes.
