Blueberry sorbetto

I wrote down the recipes for strawberry, blackberry, and raspberry sorbets. Why not try out a blueberry sorbet, too?

300g, for 2—
210g blueberries
75g sugar
4.5g lemon juice
10.5g water

Blend all the ingredients and pour the mix into your ice cream machine/freeze it.

Raspberry sorbetto

Of all the raspberry sorbets that I’ve tasted, this recipe (with amounts computed by me) is my favourite. Balanced and full of flavour.

300g, for 2:
210g raspberries
69g sugar
4.5g lemon juice
16.5g water

Blend, pour the mix into the ice cream machine/let it sit in the freezer, and… enjoy the taste.

Blackberry and coconut milk popsicles

There are hectic days (like this) and... when you've got some new popsicle moulds, you should try them out. Right?

Recipe?
(makes 6)

140g blackberries
48g sugar
10g water
3g lemon juice

175ml coconut milk
a drop of vanilla extract

Blend the first set of ingredients. Strain. Fill the lower half of the popsicle mould.
Pour the blackberry mix into the popsicle mould
 
Mix the coconut milk and the vanilla extract and pour over the blackberry blend – I prefer not adding any sugar, to perceive the coconut flavour better –.

Cover. Freeze for 2 hours.
Savour.

Melon popsicles

3 popsicles

128g melon (diced)
38g sugar
3g lemon juice
13g water
a pinch of salt
a drop of vanilla extract
a drop of rose water

When I was a child – I don’t know if it happened to you –, I loved watermelons (they were even synonymous with summer to me), but I wouldn’t touch melons (although my parents adored them).
This changed in 2011, during my first trip to Brazil. I rediscovered melons. Or should I say that I discovered them? :D
It’s Marcel’s turn not to eat melons in any other form than fresh. But that doesn’t stop me from preparing my treats.  
Like these popsicles.
So easy to make! And don’t get me started on the taste…
Blend all the ingredients.
Pour the mix into the popsicle moulds.
Freeze.

If I start thinking about it, the rose water adds an oriental flavour. It is definitely a mix of continents.

I waited until July to share this recipe with you—how do we make 300g of delicious blackberry sorbetto (for 2 people)?

210g blackberries
72g sugar
4.5g lemon juice
13.5g water

Blend + add into the ice cream machine/freezer + serve.

Strawberry sorbetto

Makes 400g sorbetto

I was lucky enough to realise that I can make desserts. It happened at Carpigiani Gelato University in 2017, where I signed up for a short class. It was one of the experiences of my life – I actually discovered how to make a quality sorbetto.
I will share with you the recipe computed using the figures and secrets learnt in the small municipality near Bologna.

280g strawberries
97g sugar
6g lemon juice
16g water

I blend the ingredients and pour the mix into the gelato machine (mine takes 30 minutes to get the sorbetto to the right texture).

You can also leave it in the freezer for at least 1 hour.

The result will be smooth, silky, and filling.
