Petra's Rolling Pin

Ricciarelli

One year ago, right before Christmas, I discovered a recipe for some Italian almond cookies by Nonna Fina. They turned out so great that they became a popular treat in our family. I adapted my ricciarelli recipe; you could try it out these Holidays!

You need:

225g almond flour

150g sugar

2 egg whites (room temperature)

*Vegan ricciarelli are possible, with 6 tbsp of water + 2 tbsp of psyllium or flaxseeds.

a dash of salt

the lemon zest from half a lemon

3 drops of almond extract (optional)

How to bake them?

Beat the egg whites with the salt. Add the almond extract if you decide to use it.

In a separate dish, mix the almond flour, sugar, and lemon zest.

Add the foam to the mix; stir easily. The dough will be slightly sticky.

Split the dough into two parts; shape them into two rolls. Cut the dough slices with a knife. Shape them into diamonds. Then, place them into a baking pan lined with baking parchment. You will get 13-14 ricciarelli from a roll.

Shape the cookies into diamonds

Bake them for 15-20 minutes at 180°C. After 10 minutes, supervise them so you don’t burn them. ;-)

Enjoy them! ♥

Bezele

makes 130 bezele

4 egg whites

200g sugar

1 tbsp of vinegar

a pinch of salt

When I have more egg whites than needed, my thought flies to my Mom’s bezele recipe.

Here it is!

Take the egg whites out of the fridge. When they sit at room temperature, their foam will be richer.

Mix them with the sugar, adding it bit by bit. Then, mix in the vinegar [it will make the foam ’sit’ and the bezele feel glossy] and the salt.

Fill a pastry bag with the foam and draw bezele. Make a circle, letting the foam flow, then lift the pastry bag.

Bezele in the baking pan

I got 2 large baking pans and a small one.

Bake in the preheated oven at 110°C for 30 minutes.

They’ll be crunchy for 2-3 days in closed bowls or bags.

That is, if you don’t eat them in the meantime. 😊

Passion fruit Pavlova

5 egg whites

2 tbsp vinegar

200g sugar

10g vanilla sugar

5 tbsp cornstarch

+

10 pcs of passion fruit

3 teaspoons sugar

+

250g whipping cream

25g sugar

I haven’t baked a large Pavlova in a while – only its mini version. After Christmas, I was, however, left with many egg whites. Without a cake made by me on my birthday, it was time to bake it!

Beat the egg whites; when they are stiff, pour in the vinegar. Continue to mix, adding the sugar and the vanilla sugar mixture bit by bit. The cornstarch comes in at the end.

Line a baking pan with baking parchment. Using a round shape (mine is 23 cm wide and 7 cm deep), pour the mixture, level it, and remove the shape.

Use a round shape to make the meringue

Bake for 2 hours in the preheated oven at 100°C (after baking, leave the meringue in the oven for 5-10 more minutes with the door slightly open; it will prevent it from cracking).

The meringue right before baking

In the meantime, scoop out the passion fruit pulp. Add the sugar and mix.

When the meringue has completely cooled, beat the whipping cream with the sugar.

Decorate by using a pouch to add tufts of whipped cream (Marcel’s idea) and the passion fruit mixture on top.

Use what’s left from the passion fruit mixture for individual slices when you serve them – that is if your Pavlova keeps in the fridge without being munched. :D

 Sarlota

Makes 5

This is my Grandma’s recipe and I found it in a very old notebook. I tested it and translated it and, first of all, here are the ingredients that I used—

500ml milk

8 teaspoons sugar

vanilla extract

50ml water

20g cornstarch

2 egg whites

30g powdered sugar

250ml sour cream

It is a homemade şarlota [=a type of Romanian custard that we eat separately, as a pudding], which took me back to the walks around my grandparents’ village, stopping at the only sweet shop in the area to buy the inexpensive yellowish dessert that calmed my cravings for ’something sweet’.

How did I make it?

Mix the milk, sugar, and a little bit of vanilla extract in a pan; leave it for 5 minutes on low-medium heat and 15 minutes more on low heat, without stirring. Then, add the cornstarch dissolved in water and let the mix cool.

Separately, beat the egg whites with the powdered sugar until stiff and easily stir in the sour cream, using a wooden spoon. Pour this cream into the milk mix and split the final mix into 5 cups. Let these cups sit in the fridge overnight.

The two mixes for sarlota

I served şarlota with whipped cream. What about you? J

Swallow's nest

Makes 10

Dough

330g flour

5g dry yeast

½ sachet vanilla sugar

125g sugar

100g butter (at room temperature)

1 egg

1 tbsp of yoghurt

80ml water

Filling

140g ground walnuts

1 teaspoon of cocoa powder

3 teaspoons of sugar

1 tbsp of milk

+

1 egg white

1 teaspoon of sugar

+ honey for serving

Here’s a dessert that I wished to prepare for a long time. My Mom used to bake it when I was a little girl. It seems pretty autumnal to me!

Knead a dough from flour, yeast, vanilla sugar, and sugar. Add the butter at room temperature (it will crumble), the egg, the yoghurt, and the water. Let the dough rise for 1 hour.

The dough after rising

Add the cocoa powder, sugar, and milk into the ground walnuts.

Cut the dough into two equal parts. Roll out the first sheet (30x20cm); brush the walnut mix onto it. Roll out the second sheet and place it on the first sheet. Beat an egg white with sugar until stiff and brush it onto the second sheet.

The two dough sheets - with walnuts and egg white beaten stiff

Then, roll both sheets, stick them with a few drops of water and brush the roll with the egg white and sugar mix that will be left. Cut 2 cm-thick pieces and place them into a baking pan lined with baking parchment. Bake in the preheated oven, at 200°C, for 10-12 minutes.

The rolls ready for baking

They are wonderful with honey! ♥

Blueberry mini-Pavlovas

Makes 4

2 egg whites
100g sugar
5g vanilla sugar
1 tbsp vinegar
2 tbsp cornstarch

+ 150g blueberries
+ 250g sour cream, 25% fat content (or whipping cream)
+ 30g sugar

I have been baking large Pavlovas for a while and Marcel adores them, but... when I found the bezele (=a type of homemade meringue treats) recipe of my Mom, I told myself ’Why not?’. Is it not one of life’s perks to try new things? J

This is how I adapted the recipe—
Beat the egg whites; when they are stiff, pour in the vinegar. Continue to mix, adding the sugar and the vanilla sugar bit by bit. The cornstarch comes in at the end – it will help stabilise the meringue.
Beat the egg whites

Line a baking pan with baking parchment. Using some round shapes (mine are 8cm wide and 4cm deep), divide the mix into four equal parts, level, and remove the shapes – don’t worry, the structure will hold.
Using some round shapes, divide the mix into four equal parts

Bake them for 35 minutes in the preheated oven at 110°C (after baking, leave the meringues in the oven for 5-10 more minutes with the door slightly open; it will prevent them from cracking).
When they are completely cooled, beat the sour cream/whipping cream with the sugar and use the final result to decorate the meringues; add the blueberries on top.

Enjoy them and good luck sharing the fourth mini-Pavlova if your family includes three persons!

Romanian-style amaretti

Makes 20

65g walnuts
100g sugar
2 egg whites
5g vanilla sugar
3 drops of almond essence
10g flour

’Mom, what are you baking?’

’Amaretti.’ [It’s even more difficult to pronounce in Romanian – we call them ’pricomigdale’.]
I remember that bizarre name. ’It sounds so posh’, I’d tell myself. I was 8 or 9.
Every time I got a bite of those cookies, the name-related thought would disappear. They were that good!...

How can you bake them, too?

Grind the walnuts and mix them with the sugar.
Grind the walnuts and mix them with the sugar

Add the egg whites without beating them and heat the batter on low heat; don’t stop stirring.
By continuing to stir, cool the batter.
Add the vanilla sugar, the almond essence, and the flour – you will notice the batter turning thicker and gummier.
Form circles with a spoon in a baking pan, on baking parchment. Bake in the oven, preheated at 150°C (with ventilation – as set in the case of all my recipes), for 10 minutes.

My amaretti are as tasty as those of my childhood. Now I can even say their names right.
How have yours turned out?

Romanian-style amaretti with almond flakes

Version:

If you wish to avoid the almond extract, but still aim for that almond flavour, add 5g of almond flakes on top of the 60g of chopped walnuts.

Rogel

4 x mini Rogels

Dough
200ml sour cream, 25% fat content
200g flour

Filling
200g dulce de leche

Italian meringue
50g sugar
25ml water
1 egg white
a drop of vanilla extract

One of the dearest souls to my heart is an Argentinean girl called Nuria. Besides being really close friends (we met 9 years ago while staying at the same B&B – she was accompanied by her love, Telemaco –and they have a lovely little girl now, called Allegra- and I was accompanied by my Marcel), we have many things in common. One of our greatest passions is the one for baking.
She quit her job as a lawyer and opened an online bakery (she delivers her bakes and you can see them here –) and... while drooling over her posts, I got acquainted with... Rogel. [I was obsessed with Argentinean dulce de leche anyway.]
In January, we saw each other again in Argentina and we had made some plans to bake together, but we wandered more. Heading north, I tasted Rogel in Salta. It drove me crazy. So, I asked Nuria to give me the recipe. She was very glad to allow me to share it with you, as well. She also gifted me with dulce de leche – even the version for pastry chefs (and we agreed that we loved Vacalin).

Slowly knead the two ingredients for the dough, in order not to activate the gluten. When the dough is no longer sticky, leave it in the fridge for 10 minutes (when pressed, the dough should not return to its initial shape).
Knead the dough
Roll out the dough, as thinly as possible, and cut out disks using a cutter or a glass (I used a 7cm cutter and got 20 disks). Bake them in the preheated oven, on baking parchment, at 160°C, for 12 minutes.
Bake the disks

After cooling, the disks will be put one on top of the other (I made towers of 5 disks each), with dulce de leche in-between.
A small trick: Press each tower after completing it.
Make towers with dulce de leche in-between

In the end, decorate each tower with Italian meringue. How to make it?
Beat the egg white stiff.
Meanwhile, leave the water and the sugar on low heat. When the sugar dissolves, increase the heat and stop stirring. After approximately 5 minutes, pour the syrup over the egg white and add a drop of vanilla extract. Mix carefully, pour into a decorating pouch and decorate each Rogel. If you wish, use a kitchen torch to give a touch of colour to your mini-cakes. J

Gracias, mi Nu – te quiero mucho ♥
