Quinoa crust pizza

For a different pizza (but a filling one!), you’ll need—

 

100g quinoa (+500ml water)

a pinch of salt

1 tbsp of olive oil

60ml water

+tomato juice

+2 tomatoes

+salt

Optional: avocado

 

How can we bake a pizza from these?

Pour hot water over the quinoa.

Let it sit for half an hour. Drain the quinoa thoroughly. Then, add it into a blender with the salt, olive oil, and water.

Spread the batter onto a pizza baking pan over baking parchment. Bake in the preheated oven for 20 minutes at 200°C.

Remove from the oven. Spread tomato juice over the crust, place the sliced tomatoes, add the salt, and bake for 15 minutes more at 200°C.

Add avocado slices over the pizza if you wish after removing it from the oven the second time.

Pizza cu blat de quinoa 
Pentru o pizza mai altfel, dar, vă promit, savuroasă, veţi avea nevoie de—

 

100g quinoa (+500ml apă)

sare

1 lingură de ulei de măsline

60ml apă

+suc de roşii

+2 roşii

+sare

Opţional: avocado

 

Cum ajung toate acestea pizza?

Peste quinoa se toarnă apa fierbinte.

După o jumătate de oră, quinoa se scurge bine, apoi se adaugă în blender, împreună cu sarea, uleiul de măsline şi apa.

După mărunţire, întindeţi pe o tavă de pizza, peste hârtie de copt. Coaceţi în cuptorul preîncălzit, la 200°C, 20 de minute.

Scoateţi din cuptor, întindeţi suc de roşii peste blat, aşezaţi roşiile tăiate felii, adăugaţi sare, apoi mai coaceţi încă 15 minute, tot la 200°C.

Puteţi adăuga felii de avocado peste pizza după ce o scoateţi a doua oară din cuptor.

Chocolate pudding

40g brown sugar

salt

3 tbsp cocoa powder

3 tbsp cornstarch

420ml milk

80g sour cream

100g dark chocolate

 

Homemade puddings and pudding powder puddings are a million miles away. This one is the best version I’ve had. I hope that you agree!

 

Mix the brown sugar, salt, cocoa powder, and cornstarch in a deep pan. Then, add 120ml of milk and stir well until there are no more lumps. Pour the remaining milk and mix in the sour cream.

Chocolate pudding ingredients

Start heating the mix on low heat. Stir from time to time. After boiling, add the chocolate (chips or cut into pieces); stir until it is incorporated.

Remove from heat and place the pudding into the serving dishes. Let the pudding cool; place the serving dishes into the fridge for at least 4 hours.

Banana, chocolate, and almond flour cake

I have this recipe from my dear friend Paula. Thanks to her, I discovered hungryhappens.net; we tried several recipes from the blog, even together! ♥

I adapted the recipe. I baked it on our anniversary; Marcel loved it (when he immediately asks for a second slice, he likes a dessert a lot). J

 

Use

a large ripe banana

30ml flaxseed oil

a medium egg

85ml agave syrup

vanilla extract

a teaspoon of ground coffee

2g baking powder

90g almond flour

90g tapioca powder

salt

30g dark chocolate

 

How to bake it?

Mash the banana, add the flaxseed oil, the egg, the agave syrup, the vanilla extract, the ground coffee, the almond flour, the tapioca powder, the salt, and 15g of dark chocolate chips.

Pour the batter into a round silicone baking pan, using the remaining 15g to decorate the cake.

Then, bake the cake for 25 minutes in the preheated oven at 180⁰C.

 

You’re going to enjoy this cake a lot!

Almond flour pancakes

I had some almond flour left (bought for this cake). I had forgotten how sticky the almond flour batter is!

 

The ingredients?

2 eggs

65g almond flour

30g tapioca powder

3g baking powder

salt

a banana

 

+1 teaspoon of coconut oil

+some honey, some ground walnuts

 

for 4 pancakes (Φ 14 cm)

 

Mix the eggs, the almond flour, the tapioca powder, the baking powder, and the salt. Add the banana that you mashed.

Fry them in a teaspoon of coconut oil. They are ready when you see bubbles form in the batter.

To end in glory, serve them with honey and ground walnuts.

 

Honestly, they were even tastier than I expected them to be! That’s why they’re on this blog! J

Butternut squash cream soup with ginger

 

I’ve wanted to post this recipe since New Year’s Eve. It was inspired by a delicious carrot and ginger soup served in Kenya. Marcel prepared it, to give me something vegetarian to eat at the passing between the years.

He used:

150g butternut squash

salt

10g ginger

a clove of garlic

100ml water

 

Is it easy to make? Very easy! Clean the butternut squash, cut it into slices, and let it sit in the oven for one hour in a baking pan lined with baking parchment at 180-200⁰C.

Then, while they’re still hot, blend them with the salt, ginger, garlic, and water. Serve it after 1-2 minutes.

 

Mmm... This is how I entered 2024. J

 

P.S. If you let the butternut squash cool, pour hot water into the blender.

Cinnamon and yoghurt cookies; cup by Diana Tivu; aronia syrup by Culmea Fructelor

I had forgotten about this cinnamon and yoghurt cookie recipe. They’re a real treat for cinnamon lovers and quite easy to make.

 

Ingredients:

60g butter

120g yoghurt

120g whole-wheat flour

5g baking powder

a pinch of salt

4 tbsp sugar

1 tbsp cinnamon powder

for 25 cookies

 

Method:

Melt the butter.

Meanwhile, mix the flour, baking powder, pinch of salt, sugar, and cinnamon.  

Add the melted butter and the yoghurt.  

In a large baking pan lined with baking parchment, shape the dough as cookies.

Then, bake in the (preheated) oven for 15 minutes at 180⁰C.

Crispy bread with cheese and tomato juice
 
The crispy bread with cheese and tomato juice is my childhood’s recipe. My Mom used to make it for me.

How did it start? J

When I was a child, there was a magazine called ’Universul copiilor’ [’The Universe of Children’]. Whenever a new number came out, my Mom would buy it for me. One of these magazines included this recipe.

Well, we changed it a bit over the years, using various types of bread and cheese; however, I still love this recipe – it became part of my family.

 

How to make it?

For 1 portion, you will need

4 slices of bread

1 small onion

1 tbsp of sunflower or flaxseed oil

a pinch of salt

a little bit of sugar

6 tbsp of tomato juice

15g cheese

 

Place the bread slices into a baking pan.

Clean and cut the onion.

Sizzle the onion, adding a pinch of salt and some sugar into the oil (it will enhance the flavour of the onion). In the end, mix in the tomato juice. Spread the mixture over the bread slices, carefully dividing it.

Grate the cheese.

Place in the oven for 10 minutes (la 180⁰C).

Pumpkin seed butter waffles

I wanted to make them for so long. In the end, I did.

What to use for 7 waffles?

130g flour

3g baking powder

200ml milk

3g salt

30g (melted and cooled) butter

2 tbsp of pumpkin seed butter

 

How to make them?

Have your waffle-making device ready.

Mix all the ingredients. Transfer the batter to the waffle-making device by using a ladle. Be careful! The batter will be very elastic. You can place a ball of batter in the middle of the waffle mould – it will spread when heated.

These waffles are very filling. They can even be used as ’bread slices’ or eaten with vegetables and cheese.

Saratele

Here’s a recipe right before Christmas, if you’ve not already baked everything. My dear Cristina gave it to me – and I thank her!

I only adapted it a bit; I can say that it was successful. I’ll also prepare it for Christmas Eve.

 

This is what you’ll need J for 28-30 sărăţele (or a large baking pan)—

125g sour cream

75g (melted and cooled) butter

6g salt

4g dry yeast

220g flour

 

+ 1 egg

+ shredded cheese

+ caraway seeds

 

How to make them?

Mix the sour cream, the butter, and the salt; then, add the dry yeast and the flour, being careful not to deactivate the yeast by placing it into contact with the salt.

Knead until you get a compact dough. Cover it and let it sit for one hour. It won’t rise much, but it will get more tender.

Split the dough into four equal pieces to make your job easier. Using a cutting roll, cut the sărăţele and place them into a large baking pan, on baking parchment.

After brushing the egg onto the sărăţele, you can leave them as such (plain) or sprinkle shredded cheese and/or caraway seeds onto them.

 

How to bake them?

Place the baking pan for 10-13 minutes in the preheated oven at 200⁰C, depending on how crunchy you want them to turn out. I like them fluffier.

 

They won’t last long, but they will bring smiles along!

Gorgonzola and pear treats

 

We have been baking them for many years. They were inspired by one of Paul Hollywood’s recipes; I used to admire him, but I no longer do.

 

This is my version; you will need—

160ml water

5g dry yeast

2 teaspoons of sugar

250g flour (+50g flour)

4g salt

30g (melted) butter

 

+ 150g gorgonzola

10 walnuts

1 large pear

 

How to make them?

Make the dough first; it resembles the roll dough a lot.

Add the yeast and the sugar to a glass filled with water at room temperature; let the mix sit for 5 minutes.

Weigh 250g of flour, add the salt, and melt the butter. Wait for the butter to cool. Add the water, yeast, and sugar mix, but also the cooled butter.

Knead until the dough is no longer sticky; if needed, add up to 50g of extra flour.

Cover with a kitchen towel. Let it rise for 1 hour.

The dough has risen. Roll it out with a rolling pin.

Spread gorgonzola over the dough, add the crushed walnuts, and roll the dough (use water to stick the ends).

Cut pieces 1.5-2cm wide. Place them into a baking pan lined with baking parchment.

Slice the pear and place one slice (or two – if they are smaller) onto each piece of dough.

Bake in the preheated oven at 200⁰C for 15 minutes.

They are delicious! At times, 5-6 suffice for dinner.

Sweet soft cheese tart

Crustless. J
For when you’ve got large amounts of sweet soft cheese (it may be ricotta, of course)!

 

These are the ingredients I used and this is how I used them—

525g sweet soft cheese (ricotta)

375g sugar

140g (fat) yoghurt

4 (large) eggs

a drop of vanilla extract

a dash of salt

4g baking powder

225g (whole-wheat) flour

zest from an organic lemon

 

Mix the sweet soft cheese with the sugar until it is fully incorporated, by using a wooden spoon.

Add the yoghurt, the whole eggs one by one, the vanilla extract, the salt, and the baking powder.

Finally, mix in the flour. I used whole-wheat flour; I believe it added a special flavour, but you may use regular wheat flour.

Before transferring the batter into the baking pan, zest the lemon. I used a round silicone mould, so I needn’t butter and flour it; use butter and flour if baking in a regular pan.

Bake in the preheated oven at 180⁰C for 35 minutes. Then, bake the cake for 5 more minutes at 160⁰C.
