Dulce de leche

If you don’t make it yourselves, there are several options in Argentina. My favourite is from Vacalin, with the Repostero variant for pastry chefs.

Uruguay, Chile, Colombia, and Brazil are also producing it.

Closer to us, they make some good dulce de leche in the Canary Islands. A rather good version to try in Europe is from Márdel.

Dulce de leche

Dacă nu îl faceţi singuri, în Argentina există mai multe opţiuni. Preferatul meu este de la Vacalin, cu varianta Repostero pentru patiseri.

Uruguay, Chile, Columbia şi Brazilia sunt, de asemeni, ţări producătoare.

Mai aproape de noi, în Canare se face un dulce de leche bun, iar în România puteţi găsi unul destul de bun de la Márdel.

Today: dulce de leche

 

What is it? A more elaborate caramel, cooked for a longer time. 

 

What is its origin? My beloved Argentina. I was reading on the plane taking us from Comodoro Rivadavia to Buenos Aires in January 2020 that Argentines produce 95000 tons of dulce de leche yearly; they only export 10% of this amount.

 

Why do I love it? Because it turns a regular dessert into an unforgettable one. Additionally, it keeps well; it is easy to work with.

 

How do I use it? As a filling for the Argentinean staple desserts Rogel (in the picture, made by me) and alfajores.

Astăzi: dulce de leche

 

Ce este? Un caramel mai elaborat, gătit pentru mai mult timp.  

 

De unde provine? Din iubita mea Argentina. Citeam pe avionul dintre Comodoro Rivadavia şi Buenos Aires, în ianuarie 2020, că argentienii produc anual 95000 tone de dulce de leche; exportă doar 10% din această cantitate.

 

De ce îmi place? Pentru că transformă un desert obişnuit într-unul pe care nu-l vei putea uita. În plus, se păstrează bine şi se lucrează uşor cu el.

 

La ce îl folosesc? Ca umplutură pentru deserturile-emblemă argentiniene Rogel (în fotografie, preparat de mine) şi alfajores.

Cocoa alfajores with dulce de leche

26 cookie halves -> 13 alfajores

 

120g butter (room temperature)  

80g sugar

2 egg yolks

vanilla extract

190g flour

8g baking powder

a pinch of salt

30g cocoa

 

+100g dulce de leche (or caramel if don’t have dulce de leche)

+45g dark chocolate


Munching alfajores was one of the loveliest dessert-related events in Argentina. I did have them in Uruguay and Chile, but Argentine alfajores had something special, with the special Argentine dulce de leche... As I miss my friends and Argentina very much, I asked my dear friend Nuria to give me the recipe. You can find Nuria and her bakes here and here – she is a very talented pastry chef!


And then, as Nuria and I are so much alike, even the recipe is listed in a simple manner that I try to use, too (I translated it and adapted it from Spanish).

Mix the butter and the sugar; add the yolks and some vanilla extract drops; continue to stir.

In a separate bowl, measure the flour, add the baking powder, the salt, and the cocoa. Mix the dry ingredients into the previous wet ones. You may even knead a bit, not too much, though, and proceed with one of the following two techniques.

Make the alfajores dough

Either roll out the dough and cut round cookies by using a 6cm cutter or shape balls that you crush and cut out round cookies (Nuria uses the latter technique – I tried them both out).

Bake in the preheated oven, at 180°C, for 6-7 minutes, on a baking tray lined with baking parchment, and then leave the cookies cool.

Remember, as they cool, the cookies will harden, so don’t worry if they seem too soft when you take them out of the oven. In terms of texture, alfajores are not very crunchy, anyway.

Spread dulce de leche on two halves and sandwich them together; do so for all the halves; these sandwich cookies are actually alfajores.

As a version, I wanted to chocolate-glaze them and I tested my technique on two alfajores (the amount of chocolate listed will suffice only for two – I used chocolate with 54.5% cocoa solids). I melted 30g chocolate on a steam bath; I then removed it from the heat and added the remaining 15g of chocolate, continuously mixing, until this, too, melted. This way, I tempered it, keeping it glossy and crunchy.

 

I tasted the butter, the notes of the dulce de leche and I returned to Argentina while I savoured them. Son geniales, mi Nu!

Alfajores de cacao cu dulce de leche

26 jumătăţi -> 13 alfajores

 

120g unt (la temperatura camerei)  

80g zahăr

2 gălbenuşuri

esenţă de vanilie

190g făină

8g praf de copt

un vârf de cuţit sare

30g cacao

 

+100g dulce de leche (sau caramel, în lipsă de dulce de leche)

+45g ciocolată neagră


Alfajores au fost una dintre gustările mele preferate din Argentina. E drept, am încercat alfajores şi-n Uruguay, şi-n Chile, dar parcă cei din Argentina aveau ceva special, cu al lor dulce de leche special... Şi, cum îmi este dor de prietenii mei şi de Argentina, i-am cerut reţeta prietenei mele dragi Nuria, pe care o puteţi găsi aici şi aici, şi care cofetăreşte minunat.


Apoi, cum noi două semănăm foarte mult, chiar şi reţeta e redată în manieră la fel de simplă cum încerc eu să o fac (am tradus-o şi adaptat-o din spaniolă).

Amestecaţi untul cu zahărul, apoi adăugaţi gălbenuşurile şi câteva picături de esenţă de vanilie, continuând să amestecaţi.

În prealabil, într-un vas separat, cântăriţi făina, adăugaţi praful de copt, sarea şi cacaua şi încorporaţi-le în amestecul umed anterior. Puteţi chiar frământa un pic, fără a exagera, apoi urma una dintre cele două variante din continuare.

Faceti aluatul de alfajores

Puteţi întinde aluatul şi tăia cu o formă rotundă de 6cm sau face bile pe care să le striviţi şi să decupaţi tot cu o formă (Nuria o foloseşte pe aceasta din urmă – eu le-am încercat pe ambele).

Coaceţi în cuptorul preîncălzit, la 180°C, timp de 6-7 minute, pe o tavă pregătită cu hârtie de copt, apoi lăsaţi biscuiţii să se răcească.

Nu uitaţi, pe măsură ce se vor răci, biscuiţii vor deveni mai tari, aşa că nu vă speriaţi dacă vă par prea moi când îi scoateţi din cuptor. În plus, alfajores, ca structură, nu trebuie să fie foarte crocanţi.

Ungeţi câte două jumătăţi cu dulce de leche şi împreunaţi-le – aceşti biscuiţi-sandviş sunt, în fapt, alfajores.

Ca variantă, am zis să încerc să îi glazurez cu ciocolată şi am testat pe doi alfajores (atât vă va ajunge cantitatea de ciocolată menţionată – am folosit ciocolată cu 54.5% cacao). Am topit 30g ciocolată (bain-marie), apoi am luat de pe foc şi am încorporat cele 15g de ciocolată rămase, amestecând încontinuu, până s-a topit. Am făcut asta ca să o temperez, să aibă luciu şi să fie crocantă.

 

Am simţit untul, notele din dulce de leche, m-am reîntors în Argentina cât i-am savurat. Son geniales, mi Nu!

Rogel

4 x mini Rogels

Dough
200ml sour cream, 25% fat content
200g flour

Filling
200g dulce de leche

Italian meringue
50g sugar
25ml water
1 egg white
a drop of vanilla extract

One of the dearest souls to my heart is an Argentinean girl called Nuria. Besides being really close friends (we met 9 years ago while staying at the same B&B – she was accompanied by her love, Telemaco –and they have a lovely little girl now, called Allegra- and I was accompanied by my Marcel), we have many things in common. One of our greatest passions is the one for baking.
She quit her job as a lawyer and opened an online bakery (she delivers her bakes and you can see them here –) and... while drooling over her posts, I got acquainted with... Rogel. [I was obsessed with Argentinean dulce de leche anyway.]
In January, we saw each other again in Argentina and we had made some plans to bake together, but we wandered more. Heading north, I tasted Rogel in Salta. It drove me crazy. So, I asked Nuria to give me the recipe. She was very glad to allow me to share it with you, as well. She also gifted me with dulce de leche – even the version for pastry chefs (and we agreed that we loved Vacalin).  

Slowly knead the two ingredients for the dough, in order not to activate the gluten. When the dough is no longer sticky, leave it in the fridge for 10 minutes (when pressed, the dough should not return to its initial shape).

Roll out the dough, as thinly as possible, and cut out disks using a cutter or a glass (I used a 7cm cutter and got 20 disks). Bake them in the preheated oven, on baking parchment, at 160°C, for 12 minutes.

After cooling, the disks will be put one on top of the other (I made towers of 5 disks each), with dulce de leche in-between.
A small trick: Press each tower after completing it.

In the end, decorate each tower with Italian meringue. How to make it?
Beat the egg white stiff.
Meanwhile, leave the water and the sugar on low heat. When the sugar dissolves, increase the heat and stop stirring. After approximately 5 minutes, pour the syrup over the egg white and add a drop of vanilla extract. Mix carefully, pour into a decorating pouch and decorate each Rogel. If you wish, use a kitchen torch to give a touch of colour to your mini-cakes. J

4 x mini Rogel

Aluat
200ml smântână 25%
200g făină

Umplutură
200g dulce de leche

Mering italian
50g zahăr
25ml apă
1 albuş
o picătură de esenţă de vanilie

Unul dintre cele mai dragi suflete din această lume pentru mine este o argentiniancă pe nume Nuria. Pe lângă prietenia ce ne leagă (ne-am cunoscut acum 9 ani pe când înnoptam la aceeaşi pensiune – ea cu iubitul ei, Telemaco –acum au şi o frumuseţe de fetiţă, Allegra-; eu cu al meu Marcel), avem şi multe chestii în comun. Una dintre pasiunile noastre cele mai mari este prăjituritul.
Ea s-a lăsat de avocatură şi şi-a deschis o patiserie online (livrează minunăţiile pe care le coace – şi le puteţi vedea aici –) şi... urmărind eu postările ei care te fac să salivezi, am dat peste... acest Rogel. [Eu aveam oricum o obsesie dinainte legată de dulce de leche argentinian.]
În ianuarie ne-am revăzut în Argentina şi programaserăm să coacem chestii împreună, însă mai mult am umblat haihui. Ajunsă însă la nord, în Salta, am gustat Rogel. M-a înnebunit. Aşa că i-am cerut Nuriei reţeta. S-a bucurat mult când am întrebat-o dacă ar fi de acord să o împărtăşesc cu voi. Şi tot de la ea am primit cadou şi dulce de leche – chiar şi varianta pentru patiseri (am conchis că-i bun tare Vacalin).  

Cele două ingrediente pentru aluat se amestecă uşor, pentru a nu activa glutenul. Când coca nu se mai lipeşte de degete, se lasă în frigider 10 minute (ar trebui ca, în cazul apăsării, să nu revină la forma inţială).
Preparati coca
Se întinde aluatul cu sucitorul, cât mai subţire posibil, şi se taie discuri cu o formă sau cu un pahar (eu am folosit o formă de 7 cm şi mi-au ieşit 20 discuri). Coaceţi-le pe hârtie de copt, în cuptorul preîncălzit, la 160°C, timp de 12 minute.

După ce se răcesc, discurile se vor aşeza unul peste altul (eu am făcut turnuleţe de câte 5), cu dulce de leche între ele.
Un mic truc: Apăsaţi peste fiecare turnuleţ după finalizare.

La final, fiecare turnuleţ se decorează cu mering italian. Cum îl preparaţi?
Bateţi albuşul tare.
Între timp, lăsaţi apa şi zahărul pe foc mic. După dizolvare, lăsaţi siropul pe foc mediu, fără a amesteca. După aproximativ 5 minute, turnaţi-l peste albuş şi adăugaţi un strop de esenţă de vanilie. Amestecaţi cu grijă, turnaţi într-o formă de ornat şi decoraţi – va trebui să lucraţi foarte repede. Dacă doriţi, folosiţi un arzător de bucătărie pentru a da un pic de culoare Rogel-ului vostru. J
