Cartof


I believe that those in my generation or even the following remember cartof [potato, as it is shaped like one] with nostalgia.

So, I couldn’t have skipped making it. It was my second time. They turned out wonderfully, without artificial flavours – and from here we understand how much good ingredients matter.

 

For 5 medium pieces of cartof, you will need

130g biscuits

50g butter

60g condensed milk

2 tbsp of cocoa powder

1 dash of rum


+2 tbsp of cocoa powder

 

After crushing the biscuits, add the melted butter, condensed milk, cocoa powder, and rum.

Shape them into potatoes, place them in a bowl, and let them sit in the fridge.

I suggest removing them from the fridge a few minutes before eating them. This way, they will not be too hard. Roll them through cocoa powder; then, enjoy their taste!

Bezele

makes 130 bezele

 

4 egg whites

200g sugar

1 tbsp of vinegar

a pinch of salt

 

When I have more egg whites than needed, my thought flies to my Mom’s bezele recipe.

 

Here it is!

Take the egg whites out of the fridge. When they sit at room temperature, their foam will be richer.

Mix them with the sugar, adding it bit by bit. Then, mix in the vinegar [it will make the foam ’sit’ and the bezele feel glossy] and the salt.

Fill a pastry bag with the foam and draw bezele. Make a circle, letting the foam flow, then lift the pastry bag.

I got 2 large baking pans and a small one.

Bake in the preheated oven at 110°C for 30 minutes.

 

They’ll be crunchy for 2-3 days in closed bowls or bags.

That is, if you don’t eat them in the meantime. 😊

Walnut pound cake

5 eggs
200g sugar
1 teaspoon baking powder
150g (white) flour
35g butter, softened
35g walnuts, crushed
zest from 1 organic lemon
juice from half an organic lemon


Separate the eggs. Beat the egg whites with 180g of sugar until stiff.
In another bowl, mix the egg yolks with 20g of sugar, plus the lemon juice and zest. Add half of the flour. Slowly blend this mixture into the egg white foam by using a wooden spoon. Pour the remaining flour into the bowl, together with the baking powder. For the final touch, add the softened butter and the crushed walnuts.

Line a baking tray (≈25x10cm) and fill it with the cake mixture; then, place it into the preheated oven (180°C) and bake for 35-40 minutes until golden.

Serve with a cup of coffee or tea.

Biscuit salami - and the recipe with my Mom's handwriting

500g biscuits

375ml water

150g sugar

100g butter

4 tbsp cocoa

vanilla extract

rum essence



Crush the biscuits.

Add the water to a pot and leave it simmer, without mixing; add the sugar.
3 minutes after you see bubbles form on the sides of the pot, add the butter and leave the mix to simmer for 3 minutes more.
Remove the pot from the heat and add a drop of vanilla extract and a drop of rum essence.
Mix in the cocoa and then start mixing in the crushed biscuits.
You will obtain a paste-like consistency; transfer it onto a plastic wrap and shape it into a salami.

Chill in the fridge overnight, slice in the morning, and... enjoy!

When I was a chubby little blonde girl with curls, I used to love the days when my two grandmothers would clear the kitchen table, bring a wooden worktop half the size of the table [and it was one big table!] and, to the left, I had my own little space to sift some flour. To play, to create, to give life to the most delicious bakes.

The connection broke. But not entirely. I’ve always loved sweets, but I don’t know how I got convinced that I couldn’t bake them. (I had a secret thought of marrying a baker or a pastry chef… and ask him to bake for me.)
Two years ago, I discovered some cookies that I kept preparing for my love, because he was crazy about them. I also registered for a short gelato class at Anzola dell'Emilia. I felt the same energy that the Food Network shows give off and I followed my heart. My tangerine sorbetto, prepared by me from A to Z, was the most appreciated of all and was immediately displayed for sale.

I got my connection back and it keeps intensifying. I got to trust myself more. I try out so many things! Most of them are healthy – I don’t like cooking with oil and I’ve been a vegetarian since I was 3. My desserts are mainly fruit-based, even vegetable-based. I believe that the most important thing is, apart from using the best ingredients that you can find, to put soul into it. Any bake must awaken something in the person tasting it – friend or stranger.

I am happy when I see that everything gets eaten from a plate, when I see the people that I feed happy!
Travels have been the most important part of my life for almost 14 years. What did I miss most on my last trip? Baking! How do I make that feeling go away? I learn recipes, I ask people, I taste, and… I returned home with cocoa, coconut flakes, and dehydrated papaya.  
I dream of opening a café someday, where I would spoil my visitors with the joy that I felt whenever I experienced new flavours, in various parts of our world. I would like them all to be gathered under one roof!
