Walnut pound cake

eggs
200g
sugar1 teaspoon baking powder
150g (white) flour
35g butter, softened
35g walnuts, crushed
zest from 1 organic lemon
juice from half an organic lemon
Separate
the eggs. Beat the egg whites with 180g of sugar until stiff.
In
another bowl, mix the egg yolks with 20g of sugar, plus the lemon juice and
zest. Add half of the flour. Slowly blend this mixture into the egg white foam
by using a wooden spoon. Pour the remaining flour into the bowl, together with
the baking powder. For the final touch, add the softened butter and the crushed
walnuts.
Line
a baking tray (≈25x10cm) and fill it with the cake mixture; then, place
it into the preheated oven (180°C) and bake for
35-40 minutes until golden.
Serve
with a cup of coffee or tea.
