Cartof


I believe that those in my generation or even the following remember cartof [potato, as it is shaped like one] with nostalgia.

So, I couldn’t have skipped making it. It was my second time. They turned out wonderfully, without artificial flavours – and from here we understand how much good ingredients matter.

 

For 5 medium pieces of cartof, you will need

130g biscuits

50g butter

60g condensed milk

2 tbsp of cocoa powder

1 dash of rum


+2 tbsp of cocoa powder

 

After crushing the biscuits, add the melted butter, condensed milk, cocoa powder, and rum.

Shape them into potatoes, place them in a bowl, and let them sit in the fridge.

I suggest removing them from the fridge a few minutes before eating them. This way, they will not be too hard. Roll them through cocoa powder; then, enjoy their taste!

Creamy butternut squash dessert

I’ve been thinking... what cake should I make for the kittens on their birthday? They love whipped cream. And I had one butternut squash left. Wait a minute, this can actually work!

 

Ingredients used:

130-150g butternut squash

30g butter

5 tbsp brown sugar

50g biscuits

20g walnuts

150g whipping cream

20g sugar

 

Marcel cleaned the butternut squash, cut it into slices, and let it sit in the oven for about one hour in a baking pan lined with baking parchment, at 180-200⁰C.

Then, add three butternut squash slices to a pan (about 130-150g), together with the butter and the brown sugar, stirring until you get a homogenised mix.

Separately, crush 50g of biscuits in a blender, grind the walnuts, and whip the whipping cream and the sugar.

Use a big bowl (and 2 smaller ones) to set up your dessert: the butternut squash mix as your base, a ground walnut layer, a whipped cream layer, a crushed biscuit layer, another whipped cream layer, and the final crushed biscuit layer.

 

Who, in your opinion, licked the bowl where I whipped the cream? :D

 Sour cherry bombs


Another dessert taking me back to childhood, to those happy times that are not unrepeatable!

For 15 bombs, you will need

120ml water

3 tbsp sugar

1 tbsp cocoa powder

100g biscuits

75g almonds or walnuts

15 sour cherries

 

Make a syrup using water, sugar, and cocoa powder; mix the ingredients and let them simmer on low heat for 5 minutes.

After removing the pan from the heat, add the chopped biscuits and almonds (or walnuts).

Knead a little to homogenise the dough; then, take bits of it, flatten them, add a sour cherry to the middle, and shape them into bombs.

Let them sit in the fridge for one hour before munching them.

 

Enjoy them and enjoy every single day!

Moist M&M bar

15g butter (melted)
45g sour cream, 25% fat content
1 small egg
a drop of vanilla extract
100g sugar or brown sugar
60g flour
1 tbsp cocoa
9-10 small regular biscuits (Petit Beurre type, crushed)
20 M&Ms

I craved rainbow and I baked some. Do you want some colours, too?

It’s easy – slowly mix all the ingredients, pour the batter into a mould (20x20cm), place M&Ms on top.

Bake for 15 minutes, 165°C (ventilation).
Bake. Slice. Munch.

Supangle

4 portions

500ml milk
80g sugar
20g flour
25g cocoa
30g butter
30g dark chocolate

+ a few biscuits
+ some extra drops of milk
+ pistachio
+ coconut flakes

Istanbul was our stopover when we returned from Brazil, in January. As it is one of my favourite cities, I never say 'No' to a visit. Even if it's only for a few hours.
I tried a dessert that I absolutely loved and I struggled to find out its name and its recipe, but I finally did.

Supangle – a delight.

To make it, mix the milk, the sugar, the flour, and the cocoa.
Heat and stir continuously until it boils and hardens.
Add the butter and the dark chocolate and continue to mix until it cools a bit.
Put old pieces of cake or biscuits on the bottom of the ramekins and sprinkle a bit of milk on them, then pour the mix over them and refrigerate.
Sprinkle coconut flakes and/or shred pistachio before serving.

P.S. Best chocolate pudding ever. Not kidding!

Colchão de noiva

Makes 4 portions

100g biscuits
270g whipping cream
15g sugar
230g condensed milk
   500ml milk
   133g sugar

I’m travelling back in time today, to January 2019. It seems like yesterday. I was exploring the Azores with Marcel and I plan to return because I loved my experiences there! We went out one evening to a posh restaurant, recommended by our host in Ribeira Grande, and I had my eyes on a dessert – as always. Even the waiter complimented me on my choice and Marcel... well, he ordered a portion, too. He liked it that much! It became one of his favourite desserts ever.
I have been trying and trying to find its name (I did find the bill, in the end), navigating through several recipe versions. I stuck to one that resembles most what we savoured there, quenching our wanderlust and love for special desserts.

This dessert (sobremesa in Portuguese) is very easy to make.
Crush the biscuits (I used Petit Beurre type biscuits and my blender helped me a lot).

Whip the cream well and gradually mix in the condensed milk. If you decide to use a homemade condensed milk version, you can find it here.
How to set this dessert up? A layer of crushed biscuits, a layer of cream, a layer of crushed biscuits, a layer of cream, and then another thin layer of crushed biscuits. You can use a larger bowl or individual cups.

Let it sit in the fridge for at least 2 hours. It is going to be hard to resist, but I promise it is worth it!
