Petra's Rolling Pin

Makes 5

This is my Grandma’s recipe and I found it in a very old notebook. I tested it and translated it and, first of all, here are the ingredients that I used—

 

500ml milk

8 teaspoons sugar

vanilla extract

50ml water

20g cornstarch

2 egg whites

30g powdered sugar

250ml sour cream

 

It is a homemade şarlota [=a type of Romanian custard that we eat separately, as a pudding], which took me back to the walks around my grandparents’ village, stopping at the only sweet shop in the area to buy the inexpensive yellowish dessert that calmed my cravings for ’something sweet’.  

How did I make it?

 

Mix the milk, sugar, and a little bit of vanilla extract in a pan; leave it for 5 minutes on low-medium heat and 15 minutes more on low heat, without stirring. Then, add the cornstarch dissolved in water and let the mix cool.

Separately, beat the egg whites with the powdered sugar until stiff and easily stir in the sour cream, using a wooden spoon. Pour this cream into the milk mix and split the final mix into 5 cups. Let these cups sit in the fridge overnight.

  Cottage cheese pie

Baking pan: 34 x 24 cm | 8-10 portions

Filling:

500g cottage cheese

160g sugar

1 egg

 

Pie sheets:

400g flour (+50g flour if the dough is too soggy)

1 sachet baking powder

2 medium eggs

120g sour cream

100g butter (melted)

1 drop of vanilla extract

 

+ powdered sugar for serving

At Easter time, we never baked pască (=a round cottage cheese and flour pie with raisins). Actually, this pie was our pască, year after year... and my Mom would always bake it. J

 

First, make the filling by mixing the cottage cheese, the sugar, and the egg and let it sit in the fridge for 1 hour.

To make the pie sheets, prepare the dough from flour, baking powder, sour cream, eggs, butter, and vanilla extract; let it sit in the fridge, as well, for 1 hour. Then, take it out, let it warm up and divide it into two.

Roll out the first piece and place it in the buttered and floured baking pan. Then, spread the filling. Roll out the second sheet and place it on top of the filling.

Bake in the preheated oven, at 190°C, for 25-30 minutes.

 

After taking the pie out of the oven, let it cool and then cut it into squares and sprinkle powdered sugar on them before serving. They taste like childhood to me.

No-bake mini-cheesecakes

 

It’s still summer in the southern hemisphere and we’ve had some springish days, so what about some no-bake mini-cheesecakes?

What did I use (made 2)? [multiply the amounts if you’re making this dessert for more people]

 

35g Oreo crumbs + 2 tbsp melted butter for the base

200g urdă or cottage cheese mixed with            

25g powdered sugar

65g double cream

a generous amount of organic orange zest

a drop of vanilla extract

15g dark chocolate chips [or 2 tbsp Nutella]

 

Let everything set in round 8cm shapes; freeze the mini-cheesecake for 1 hour, take it out, let it warm, and decorate it with Nutella or melt the chocolate on a steam bath and pour it over it.

Eggless dark chocolate mousse

4 portions
 
200g dark chocolate
1 tbsp ground coffee
30g powdered sugar
250g sour cream, 25% fat content (or whipping cream)

What to do when we crave a chocolatey dessert?
We make a mousse!

Melt the chocolate (I used 54.5% Barry Callebaut chocolate) on a steam bath, together with a tablespoon of ground coffee (I used Colombian coffee). You will see that the taste of chocolate will be more intense.

Let the melted chocolate bowl cool a bit.
Whip the cream and the sugar.
Add it to the chocolate mixture, stirring slowly with a wooden spoon.  
Add the sour cream; stir slowly with a wooden spoon
 
Divide the mousse (yes! you did it) into 4 jars or cups (or Martini glasses).
You can decorate and serve with berries.
I have always loved simplicity.

It is a very filling dessert and I promise that it’s nothing like any ready-to-buy products found on a store shelf.
The mousse will bear your signature, you will put soul into it... and it will show.

The drunkard's cake

For the batter [20x20 cm]
2 eggs
5 tbsp water
120g sugar
130g flour
1/3 sachet baking powder

For the filling
50g ground walnuts
50g sugar
35g butter (room temperature)
35ml rum essence (I used 10ml rum + 5ml rum essence + 20ml water)
a little bit of the dough

For the glaze
50g powdered sugar
1 tbsp cocoa
1 tbsp butter (room temperature)
2 tbsp hot water

+blueberries (or other berries) to serve

My Mom used to spoil me with this cake – I used to adore it during childhood and I would always smile when she told me that she was getting ready to make it.

Let’s get started.
Make the batter: separate the eggs; slowly mix the egg whites, the water, the sugar, the flour, and the baking powder. Add the yolks (my Mom used to make this batter differently, but the result is similar). Pour it into the baking pan (I used a ceramic one, buttered and floured) and bake for 15 minutes, in the preheated oven, at 150°C.

While the cake is in the oven, grind the walnuts, mixing them with the sugar, butter, and rum. When the baking is done, wait for the sponge cake to cool and then cut a thin slice of it and mince it, adding the small pieces to the previously-prepared mix.
Spread it over the cake.

Make the glaze, by combining the powdered sugar, the cocoa, the butter, and the hot water. Coat the cake.

It’s summer and this great heat is upon us, so serve each slice with berries. It could be a well-deserved prize at the end of the day.

Sour cherry sponge cake

2 eggs
80g powdered sugar
80g flour
5g baking powder
some lemon zest
20g butter
300g sour cherries

+ powdered sugar for serving

Which ones do you like more? Cherries or sour cherries?
In our family, opinions diverge, but Marcel couldn’t refuse several slices of this cake.

Beat egg whites until stiff and add sugar bit by bit and then the yolks one by one.
Keep stirring; add the flour, the baking powder, the lemon zest, and the butter (melted).
Pour the batter into a rectangular baking pan, on baking parchment.
Place the sour cherries on top (pit them first – Marcel helped me by using a metallic straw and it seemed easy).

Bake for 15 minutes in the preheated oven, at 170°C.

Leave the cake cool in the baking pan; then, take it out, slice it, and serve it dusted with powdered sugar.

Mmmm... tasty and once again ’easy to eat’ (Marcel)! 
 
P.S. I had some giant Halmeu strawberries, so I replaced the sour cherries with 6 cut into slices.

Vanilla gelato

Makes 350g of gelato

2 egg yolks
5g vanilla sugar
100g powdered sugar
300ml milk
lemon zest
orange zest

This was the homemade gelato of my childhood. 

Mix the egg yolks, the powdered sugar, the vanilla sugar, a bit of lemon zest, and a bit of orange zest. Pour in the milk.

Place the bowl (I used a metallic bowl) onto a water bath and mix until the batter thickens.
Let the mix cool
 
Let it cool, pour it into the gelato machine, or leave it in the freezer for at least 1 hour.

From today on, my love is also addicted to the taste of this gelato. It is sooooo creamy!
