Fried bananas

When your week is really hard (and you’re like me), you will crave some comfort food.

I made fried bananas, for 2, as follows:

 

50g flour

2 teaspoons of sugar

a pinch of salt

1 teaspoon of cinnamon

2 tbsp of cornstarch

zest from half a lemon

60ml milk

2 medium-large bananas

6 tbsp honey

 

+oil for frying

 

Mix the flour, the sugar, the salt, the cinnamon, the cornstarch, and the lemon zest. Add the milk.

Batter for fried bananas

Cut the bananas into larger pieces and roll them through the batter.

Fry them until brown when the oil is hot.

We ate them with honey... yum!

Savarine

What to do when you find a 35-40-year-old recipe? Bake it! The result is called ’savarină'; it’s a syrupy cake that Romanians love... and I got 9 fantastic ones!

I needed

4 eggs

125g sugar

125g breadcrumbs

for the batter

 

300ml water

115g sugar

30ml rum

for the syrup

 

500ml whipping cream

30g sugar

oil and flour -> moulds

jam -> for decoration

Beat the egg whites until stiff and add the sugar, bit by bit. Mix in the yolks and the breadcrumbs (they will go great with the syrup), stirring slowly with a wooden spoon. Pour the batter into the moulds (I used deeper mini-tart moulds) and bake in the preheated oven, at 150°C for 15 minutes.

While the cakes are baking, make the syrup leaving the sugar dissolve on low heat. Then, pour in the rum (I used my favourite rum, an Indian one - Old Monk). While the cakes are still warm, dip them into the syrup and place them on a tray.

Cut them in half, spread jam onto the top of the upper half and sandwich the halves – use the cream whipped with the sugar.

Marcel told me that these were the best cakes that I have ever baked. It moved me. J

Banana roll

For the base:
6 eggs
6 tbsp powdered sugar
1 tbsp vegetable oil
4 tbsp cocoa
2 tbsp flour

For the filling:
110g coconut flakes (or grounded walnuts)
3 scoops milk
4 tbsp sugar
1 sachet vanilla sugar
130g butter

2 small bananas

When I was a little girl, this was my favourite cake of all those (delicious ones) baked by my Mom. In 1992, I remember that it was a Sunday afternoon, I was watching ’Dracula’ (I’ve always had a thing for horror movies), and my Mom was preparing this banana roll in the kitchen. She didn’t even manage to put it into the fridge... that I simply devoured two slices!

How can you make it, too? I will leave my Mom’s words guide you. J
Mix the egg yolks and the sugar. Then, add the vegetable oil, the cocoa, the flour, and the egg whites (beaten until stiff).
Make the batter
Line a large tray (40x40 cm) with baking paper and pour the batter. Bake in the preheated oven, at 150°C, for 12-14 minutes.

-the most challenging part of the entire recipe follows, but you can do it! try not to leave the base cool too much after removing it from the oven!-
My Mom used to take out the base on a wet kitchen cloth and roll the base and the kitchen cloth together; this way, the base didn’t crack, by taking at the same time the necessary round shape.
My way (and Marcel’s idea that saved the day) was to cut the base into halves, which we rolled using plastic wrap (a trick: we used rubber bands to help the bases keep their rounded shape).

Meanwhile, pour 3 scoops of hot milk over the coconut flakes. Add the sugar and the vanilla sugar and mix in the butter (at room temperature). I like to knead everything (and feel the texture!) instead of using the mixer. 

When the bases have cooled, spread the coconut mixture over them, put a whole banana on each base, and roll. They go into the fridge for at least 2 hours before serving.

Gogosi

Makes 32

10g fresh yeast
200ml water
50g sugar (+some sugar to sprinkle onto the water + yeast mix)
200g yoghurt
1 egg
450g flour (+flour to roll out the dough)
a pinch of salt
some orange zest

+oil for frying
+powdered sugar for serving
+preserves

I have been promising Marcel for a while now – ’We’ll have gogoşi tomorrow’... ’I’ll make gogoşi next week... really!’... and so on... But, as I like to keep my promises and I found my Mom’s old recipe, we did eat gogoşi! How to make them?

Leave the yeast in a glass with the warm water for 5-10 minutes and sprinkle a little bit of sugar.
Then, mix all the ingredients and start kneading. Be careful – only add 200g of flour at first and then the sugar, a pinch of salt, the orange zest, the yoghurt, break the egg, and also add the yeast mix from the glass. After kneading, your dough must not stick, but must not be too firm either. Let it rest in a warm spot, covering the bowl used with a lid or with a kitchen cloth. Sprinkle some flour on top.
One hour later, divide the dough into four pieces. Sprinkle flour onto the work surface and roll out the dough (1-1.5 cm thickness). Cut out circles (I used a cutter with a 5cm diameter and I got 8 such circles).

Fry them.
Dust them with sugar.
Munch.
I like them plain and with preserves. Mmmm...

It was the same on Sunday afternoons when my Mom used to spoil us with a huge plate of gogoşi.

Papanasi
15 portions (papanaşi)

200g cottage cheese
1 big egg
10g vanilla sugar
65g sugar
zest, ½ lemon
lemon juice
¼ teaspoon baking powder
140g flour

+oil for frying
+flour for dusting
+sour cream
+preserves

One of my childhood’s favourite desserts was this. I would anxiously wait for my Mom to prepare the papanaşi (she used to fry them in the pan – I will probably try it in a few weeks) and then soak them in sour cream and preserves! Mmmm... A few years ago, when one of my best friends asked me to prepare them, I called my Mom and she gave me the recipe.

The dough is very easy to make: mix the cottage cheese with the egg; add the sugar and the vanilla sugar, the lemon zest and the baking powder (pour a little bit of lemon juice over it before mixing it in). Add the flour, little by little. Start kneading and, if necessary, add some more flour until your dough is no longer sticky. 
Cut pieces of the dough, shape them into round (flat) pieces and fry them on both sides in hot oil, on a low fire.

Tip: roll the papanaşi through flour before frying them.
Serve them warm, as I’ve previously said, with sour cream and preserves – I used blueberry preserves (made by my Dad).

The result?
Marcel reacted as I did (when I was a child) earlier today. He ate everything.
