Strawberry sorbetto
Makes 400g sorbetto
I was lucky enough to realise that
I can make desserts. It happened at Carpigiani Gelato University in 2017, where
I signed up for a short class. It was one of the experiences of my life – I actually discovered how to make a quality sorbetto.
I will share with you the recipe
computed using the figures and secrets learnt in the small municipality near
Bologna.
280g strawberries
97g sugar
6g lemon juice
16g water
I blend the ingredients and pour the
mix into the gelato machine (mine takes 30 minutes to get the sorbetto to the
right texture).
You can also leave it in the
freezer for at least 1 hour.
The result will be smooth, silky,
and filling.
