Buttery snacks
 

Makes 35-40

 

I used to bake these snacks pretty often (Marcel was a big fan). Then, I stopped. On New Year’s Eve, I baked them again. Several weeks later, I baked them again.

They’re lovely!

We will use this recipe for the dough. Consequently, you’ll need—

 

250g flour (+100g flour depending on the type of flour used)

10g fresh yeast or 5g dry yeast

250 ml water

some sugar

some salt

 

+1 l water & 2 tbsp of baking soda

+15g butter & salt

 

We will make the dough based on the above recipe. After it rises, cut the dough into 4 equal pieces. Shape each piece of dough into a cylinder. Cut each cylinder into 8-10 pieces, 2-3 cm in width.

Meanwhile, pour the water into a deep pan, on low heat, and let the sodium bicarbonate dissolve. When the water starts boiling, take the small pieces of dough (3-4 at a time) and put them into the water. Turn them on the opposite side after they rise (for no more than 30 seconds on each side).

Then, place them in a large baking pan, lined with baking parchment. Continue with the remaining pieces of dough. When you’re done, sprinkle some salt on the small pieces of dough and leave them in the preheated oven, at 250⁰C, for 10-12 minutes.

While they’re baking, melt the butter. After removing the baking pan from the oven, butter each snack using a pastry brush.

Let them cool and... start eating them. You won’t be able to stop anyway!

 Milk chocolate brownie


12 slices

 

200g milk chocolate

100g butter

salt

75g flour

20g sugar

2 eggs

1 drop of vanilla extract

 

I still had part of the chocolate I had received in Tulcea from another great lover/creator of sweets, so I thought that a chocolate brownie would be a great idea. (I start craving chocolate every time the weather cools. :P)

 

How to bake it?

Melt the chocolate on a steam bath, add the butter, stirring until it melts. Mix in the salt, the flour, and the sugar; then, add the eggs and the vanilla extract.

I don’t like it when things are set in stone... in the end, why should a brownie be square-shaped?

So, I baked it in a round silicone mould, in the preheated oven at 180°C, for 30 minutes.

 

The secret to a delicious brownie is slightly undercooking it (because the cake will harden either way while it cools).

Walnut cookies

(12 cookies)

60g powdered sugar
20g cocoa
a pinch of salt
15g dark chocolate (chips or small bits)
30g walnuts
1 egg white

I like cookies, but they’re not my ultimate dessert. However, these walnut ones are my favourite cookies.
They’re special – crunchy, flavourful, easy to munch. J
If you baked sponge cakes for Easter, you surely have egg whites left and this is the perfect opportunity to use them. Depending on how many you’ve got, you can multiply all the ingredient amounts in the recipe.

What else?
Using the ingredients that you love most will always lead you to the best results. No cutting corners when we bake!
Take, for instance, cocoa. I am absolutely crazy about cocoa. My favourite types are the Colombian and the Brazilian ones. I was lucky enough to be able to buy some cocoa from Brazil before returning home at the end of January. Its smell is... Let’s not mention its flavour...

Other suggestions?
Take the egg whites out of the fridge before using them; let them reach room temperature.
Cookies should better be slightly undercooked. Even if they don’t seem hard enough, they will harden, getting crunchy and delicious!

So, mix the powdered sugar, the salt, and the cocoa. Then, add the walnuts (a little bit crushed – I like the walnut bits larger, I like to feel them in the cookies) and the chocolate chips (bits). In the end, add the egg white; be careful not to overmix.

With a spoon, transfer the batter onto a baking tray (use baking parchment). The cookies will easily get a round shape.

Bake in the preheated oven, at 150°C. After 10 minutes, turn the tray inside the oven and take it out after 2-3 minutes more. Wait for the cookies to cool – they will easily come off the parchment paper.  
  
Mine had a taste of South America and... I did improve my walnut shelling technique. :P

The walnut cookies are even tastier (I played a bit today) if you add 2 tablespoons of organic orange zest to the batter.
