Havij bastani

2 large portions or 4 small portions

1kg carrots
350g vanilla gelato (recipe: here)

Havij bastani is one of the desserts I love most. In Iran, I eat it every day and my heart is full of joy. It is so simple... and so spectacular!

Juice the carrots (you will obtain approximately 400ml juice).
Pour the juice into glasses or bowls, in equal quantities.
Add a big scoop of vanilla gelato (this is the classic version) or even two and savour it.

...again to prove that the greatest joys are found in simple things!
...while the simplicity in the kitchen can give rise to the tastiest of dishes!
