Vegan raisin bonbons

Makes 30 bonbons.

75g raisins
5g cashew nuts
150ml water (hot)
15 tbsp müsli
1 tbsp pistachio butter or 1 drop of vanilla extract
50g coconut flakes (+40g for rolling)

I am trying to lose some weight (uh-huh, lockdown), so I ‘stole’ some raisins from my chinchilla family (they love them!) and made this tasty snack.

Soak the raisins and the cashew nuts in hot water for 20 minutes. Blend. Add the müsli and the pistachio butter (optional; you could go for a drop of vanilla extract instead). Blend. For the final touch, add the coconut flakes. Shape the dough into 30 bonbons. Roll them through coconut flakes and let them sit in the fridge for 40 minutes.

They are delicious and so… filling!
