Milk pudding
(4 portions)
2 eggs
2 tbsp sugar
4 tbsp semolina
500ml milk
1 sachet vanilla sugar
+butter and flour -> baking pan
+pieces of fruit for serving
Going through the recipe notebooks
of my Grandma, I found this one, plainly titled ’Pudding’. I added ’Milk’ and
here’s how I baked it.
Separate the eggs and mix the
yolks with the sugar. Beat the egg whites until stiff and mix one tablespoon of
semolina into them, at a time. Slowly transfer this mix into the yolk and sugar
bowl.
Pour everything into a square
baking pan (20x20cm), buttered and floured. Bake in the preheated oven, at 150ºC,
for 10 minutes.
Meanwhile, heat the milk with the
vanilla sugar.
As soon as you take the baking pan
out of the oven, pour the milk over the pudding and let the liquid be absorbed.
Serve the pudding warm or cold.
But don’t forget the pieces of
fruit! I chose blackberries. J
